Nut roast recipe please

I enjoy eating veggie food, and apart from veg casseroles, veg chilli, veg lasagne, I'm a bit stumped for ideas of what to cook. The classic vegetarian meal is a nut roast, but I have no idea how to do it. Does anyone have a good recipe they'd like to share?

I have one which is mainly cashew nuts, parsnip and mushrooms. I can put it up for you later if you want.

Sorry about the lack of quantities - it is just how I cook. It is quite a time consuming recipe (the pastry bit) so make a large amount and freeze unbaked loaves. Make sure you defrost loaves before baking.

Fry up onions and garlic in wok or other large pan, add leeks and mushrooms to the pan and fry. Throw in any sort of nuts (chestnuts good at Christmas) and mix in. Make breadcrumbs in the foodprocessor with lots of fresh herbs. Stir into mix. Add beaten egg to bind together. Wrap in puff pastry (a plait style looks great). Bake in oven. Also delicious cold with cheese and chutney.
