Do I add basil during or after making tomato sauce

Will it go bitter if it cooks with the tomato sauce? I'm letting it simmer for another 30mins or so

I would add it now.

Dried basil now, fresh at end

Both! Doesn't go bitter with cooking, but you do lose the freshness of the flavour a bit, so I usually add some at the end as well. I am a sucker for basil though.

fter. It loses itsflavour on cooking

I would add it in the last few minutes if its fresh. As I have heard that it is too delicate to simmer for long.

Oh yum, mouth-watering. Plenty of it and right at the end. Hungry!

DumbledoresGirl · 09/10/2007 16:47

Oh yes, I assumed you meant dried when I said now. Re-reading, I think you mean fresh in which case I don't know!

Yes it's fresh stuff - I'll leave it for a while then add later. Thanks girls.
