Right, now the giant cookie question has been answered, does anyone have a foolproof recipe for muffins a la starbucks?

coz I've tried a few now and, frankly, they've come out a leetle disappointing. I've been careful not to over-mix, but they always taste rubbery rather than light and luscious. Can anybody help???

Indeedy.

Basic recipe is:

9oz plain flour
3 tsp baking powder
1/2 tsp salt
3-4 oz sugar
8 fl oz milk
3-4 fl oz sunflower or vegetable oil (or melted butter)
1 egg

Sift together dry ingredients. Beat egg and whisk in milk and oil. Add wet to dry ingredients and stir briefly to combine. Into cases, and bake at 190 degrees C for 20-25 mins

You can of course customise the muffins in numerous ways by the addition of 3-4 oz of any kind of dried fruit or nuts, lemon or orange zest, chopped apple, choc chips, bananas, grated carrot etc etc. The milk can be replaced by other liquid eg half orange juice/half water when making carrot muffins. You can add eg cinnamon, ginger etc - whatever you fancy

I can dig out the recipe for raspberry and pinenut muffins, which Starbucks did as a special last year, if anybody wants it.

Absolutely Dragon - that's where my recipe comes from. I have made almost every variation of muffin in that book! Love it....and it only costs 5 quid
