quick baking question

Can I mix jam in a fairy cake mixture or should I put it in a dollop in each cake just before baking or should I just not add jam to fairy cake mixture which means I have to make buns instead?

(I have jam that needs using up)

hmmm, would put a dollop prior to baking rather than mixing it in. Then roll warm cakes in melted butter then sugar - hey presto fairy cake doughnuts!

Now that does sound good...although don't know what WeightWatchers would say about it (because obviously fairy cakes with jam in feature heavily in the WW book!)

Have never heard of adding jam to a fairy cake mixture. When I want to use jam up I put it in flapjacks ie make up a flapjack mix & spread a layer in the tin, top with a layer of jam & then crumble more flapjack mix on top. Makes them very sweet & chewy.

Tommy, this may be too late but my mum used to make what we called mini bakewells. They had a pastry bottom (cut out with pastry cutter), then a blob of jam, then a sponge/fairy cake top. They were great!

Why not do a Victoria sponge with jam spread in the middle to join the halves?

Mmm sassy - like that idea, maybe try that another time. Fisil, I did think of a Victoria Sponge but DS1 prefers to make little cakes - not that he eats them mind you In the end I put a teaspoon of mixture, a blob of jam and another teaspoon of mixture to hide the jam. They were fine - served the purposes of DS1 doing baking, using up some jam and baking cakes for Grandma and Grandad when they came to visit!
