Broccoli - how can I tell when it's just about to turn yellow? I'm fed up with wasting my money!

Obviously if it was yellow in the shop I wouldn't buy it. It has a strange habit of going yellow while my back is turned. I always keep it wrapped, in the fridge so it can't be the way I'm storing it ... Can you tell by looking at the tiny buds?

if it feels firm it should last a few days in the fridge. If it feels a bit limp and floppy then it will probably not last long.

If it is only slightly yellow, make soup.

Cut the broccoli into pieces and boil it with about a pint of water,an onion and two vegetable stock cubes. Add pepper but no salt (stock cubes have enough salt). When the veg is soft, liquidise with a hand blender.

Serve with a swirl of cream and some crumbled cheese. Stilton is best but cheddar is good too.

The buds should not be dry looking - they should be nice and bright green. I generally use mine within 3-4 days. And if it's a bit yellow it won't hurt, or even taste that different, once cooked.

like Kale its really a winter veg (oct til april) so guess the stuff you have been buying over the summer may have been less fresh anyway.
