is anyone else fed up of giving the same old porridge pancakes, eggy bread, toast, cereal, yoghurt, hash browns, potato waffles, omelette, bagels, bacon, cheese on toast etc etc?

i was looking for something a bit different for breakfast today and came across these recipes. i thought we could all add some of our own favourite breakfast recipes so we can have a bit of variety at breakfast time!!

Baked Eggs (serves 4)

4 large eggs
1/4 teaspoon freshly ground pepper
1/4 teaspoon dry mustard
1/4 teaspoon paprika
1/4 teaspoon garlic
4 tablespoons grated cheese
Preheat oven to 450F (230C).
Generously butter 4 ovenproof dishes. Drop 1 egg into each dish.
Combine seasonings. Sprinkle seasonings evenly over each. Sprinkle cheese over top.
Bake for 8 to 10 minutes or until egg white is done with yolk softly cooked. (or cook in the microwave for 50 seconds)

Ham and Egg Breakfast Pizza

4 tablespoons butter
2 tablespoons flour
1/3 cup milk
6 large eggs, beaten
1 (12-inch) pizza crust (I use pitta breads sliced in half)
2 cups diced ham
2 cups shredded mozzarella cheese
1 (4-ounce) can sliced mushrooms, drained
1/4 cup thinly sliced green onion
Heat oven to 400°F (205°C).
In a small saucepan, melt 2 tablespoons butter over medium heat. Add flour; cook for 1 minute, stirring constantly. Add milk and cook until mixture thickens slightly. Remove from heat.
In a small skillet, melt remaining 2 tablespoons butter over medium heat. Add eggs and cook, stirring gently, until softly scrambled. Combine milk sauce with eggs;. Place pizza crust (or pitta) on a baking sheet and spread eggs over the top. Top with ham, cheese, mushrooms and green onion. Bake 15 to 20 minutes or until cheese is melted and bubbly.

thanks NA! have to admit that i can't be arsed with knocking up a 'recipe' at 7am so we stick to ceral or toast, but these look like good lunches too

These look good for a weekend. They could do lunch as well.

Also found:

Sesame Muffins

2-3 ripe bananas, peeled
1 egg
1 c. milk
1/4 c. butter
1 tsp. vanilla
1 1/2 c. quick oats
1/2 c. flour
1/2 c. whole wheat flour
1 tbsp. baking powder
Sesame crunch

Mash bananas (1 cup). Combine with eggs, milk, oil and vanilla; set aside. In large bowl combine all dry ingredients. Stir in banana mixture just until moist. Fill 12 muffin cups 3/4 full. Sprinkle crunch on top. Bake at 400 degrees for 20 to 30 minutes.
CRUNCH: 1/4 cup chopped nuts, 2 tablespoons brown sugar, 2 tablespoons sesame seeds, 1 tablespoon wheat flour, 1/4 teaspoon cinnamon and nutmeg. Cut in 2 tablespoons butter.

found a recipe for home-made crumpets that i might try. ds loves crumpets.

450g/1lb plain flour, sifted
½ tsp salt
1 tsp sugar
2 tsp/1x7g sachet fast-action dried yeast
300ml/½ pint warm milk
300ml /½ pint warm water
vegetable oil
4 crumpet rings or 7.5cm/3in plain pastry cutters, greased

Place the flour and salt into a large bowl and stir in the sugar and yeast making a well in the centre. Pour in the warm milk and water and mix to give quite a thick batter. Beat well until completely combined and cover with a tea towel or cling film.

Leave in a warm place to rise for about an hour until it's a light, spongy texture. Stir well to knock out any air and pour into a large jug.

Heat a non-stick frying pan over a very low heat with a drop of oil. Wipe the pan with kitchen paper to remove excess oil. Sit the greased egg rings in the pan and leave to heat up for a couple of minutes.

Pour in enough mixture to fill the rings just over halfway up the sides. Leave to cook until plenty of small holes appear on the surface and the batter has just dried out. This will take about 8-10 minutes.

Remove the rings and turn over the crumpets to cook for a further minute or two on the other side. Sit the first batch of crumpets on a wire rack while continuing to cook the remaining mixture.
