Score it with a knife in a diamond pattern, then put the joint into a very hot oven (eg 240C) for about 20 minutes before turning down to normal roasting temperature.

BTW, it's bad for you

It has to be dry as well.

Oh, and it's only bad for you if you are trying to avoid fat. On a low carb diet, fat is a good thing!
