What would go nicely in a hole in a new potato?

I've found a nice idea for canapes in Simon Hopkinson's new book - new potatoes with a hole cut in with a melon baller and filled with... well, he fills his with caviar but I think that might be a bit much for a Hallowe'en party! Any suggestions for the hole?

It reminds me of the other night when I was a tiny bit tipsy at a friends 30th. I was using scotch eggs and cocktial sausages to create certain things. I ended up holding them to my crutch and my friends were taking pics.

sorry but i'm still stuck on how you get a melon baller to make a hole in a potato that isn't the biggest potato you have ever seen..? New pots are small, right?

If it's for Hallowe'en you could mix up some soft cheese and then put a ring of coloured veg or sliced olive on top so it looks like an eye?

newlife - my melon baller is much smaller than an average new potato. If you used really tiny salad-sized potatoes then it would be a problem.

Ok, so we're talking small hole. Right, well I think you should do some kind of japanese style arty thing with the hole and carve some salmon into a,um, fanged ghoul. That should do the job.

Otherwise, I'd try and spiral some parma ham and cream cheese into the hole like a roulade. You could use tomato salsa and name them Bobbit potatoes. Or Frankenstein's nuts.
