Ginger - how to store it?

Right, I have a big thingy of ginger sat in my kitchen and I don't know what to do with it. Have used a bit of it but would like to save the rest for another day, any tips?

I just shove it in the fridge to be honest .. I break off / cut a piece off when I want to use it and just peel the piece I'm using .. any part that was peeled and open before just gets sliced off too .. the ginger inside is always fresh

Same as twigs. Keep it in a plastic bag sealed with a klippit (another plug for Lakeland!) and cut off the dried up edge and discard when I need some more. Keeps for ages (months?)

still got a big piece in the fridge from about a month ago .. dunno if its still usable though .. tends to keep quite a while (you just might have to cut more off to get to the fresh stuff)
