to make a fish pie please? Hate fish so have never made it but DH would love one.

poach fish in milk for a few minutes until it turns opaque

in a seperate pan you need to make a roux (melt butter add flour until it forms a paste and comes away from the sides of the pan/forms a sort of honecomb on the bottom of the pan) add the milk from the fish slowly and whisk over very low heat until it makes a white sauce of a slightly thicker than double cream consistency. Season.

put fish in pyrex dish, pour white sauce over, you could also add a handful of frozen peas. Top with mashed potato or mashed potato with added cheese. Now the topping is a contentious issue. Some just fork over the top of the mash, some put breadcrumbs on top. Personally I like to crush up a bag of plain crisps and sprinkle them over the mash.

place dish in oven on a baking tray and cook (about 180C or 160 fan) until the top starts to brown.
