SOUP MAKERS - MOH needs you...! - buttternut squash

Hello

I love roasted butternut squash but I have two in the fridge and thought I could make a soup with it (?)

Please share you fab recipes with me..

Roast.

Puree.

Add chicken stock, cream, and season.

Eat!

Cut in half, and roast in the skin (slower but easy) or peel and cube first

Really basic

chicken stock

pieces of squash

diced onion

can put potato or sweet potato with it too if you feel like it.

cook until squash is soft

puree the lot ( stock and all) - serve with crusty bread, swirl of cream and a few sprigs of spring onions ( shallots)

They are bastards to peel. V sharp knife, and small bits at a time, plus cut it in half first.

peel,
cut into chunks
add coconut milk instead of stock and a bit of water
thai red curry paste (couple of teaspoons)
boil
then puree

..then yummy!

I roast it with the skin as the skin goes crispy but I'm guessing for soup I could cut the skin off afterwards..

they all sound yummy, will be making it this evening.. looking forward to it already.

Roast for about 405mins or will that be too long for soup? should I roast it until just soft?
