in my mum's mac cheese recipe

you chop up an onion and chuck it in with the pasta as it boils

you add a tin of chopped tomatoes to the cheese sauce (made with a nice strong cheddar)

and green veg like brocolli goes well with it

I serve my macaroni "uncheese" with either loads of cherry tomatoes, halved, or a normal tomato and basil salad, with loads of garlic in it.

Or a mixed green salad.

Or broccoli! Anything vibrant and fresh.

Beetroot salad - honestly, beetroot goes amazingly well with macaroni cheese.

(I also have roast potatoes with it, but thats a shameful secret - it's carb heaven)

Always stick sliced fresh tomatoes in mine,fills it out a bit and its scrummy.
