Hi I plan to make individual salmon and haddock pies on sunday with either filo pastry bottoms and tops, or just tops depending on how much pastry I have.
Can I leave the pies uncovered for a couple of hours before I bake them or will they need to be covered if so with what?

brush them well with melted butter and put them in the fridge

Keep them covered with either cling film or a damp teatowel/kitchen towel as otherwise the pastry dries out.

Thanks for that I was going to brush them with butter anyway but I think I will cling film them all as well.
