Help - anyone got a very easy biscuit recipe?

and hopefully I will have all the ingredients in the cupboard already, it's raining here and need something to do with DD1 whilst DD2 is having her nap. Have loads of cutters just need a recipe

This was given to me by my manager. We've probably always got these ingredients in!

MEGA CHOCOLATE CHIP COOKIES

Makes about 24 Biscuits

Roughly chop plain chocolate if you don?t have any chocolate chips. These cookies are not quiet as crisp as a biscuit; and they won?t keep for long, a couple of days at the most.

INGREDIENTS

6oz (175G) soft margarine
8oz (225g) caster sugar
2 eggs
12oz (350g) self- raising flour
4oz (100g) plain chocolate chips

Pre- heat oven to 180c/350f/gas4. Lightly grease 3 baking trays.
Measure all the ingredients into a medium bowl and mix thoroughly until a smooth biscuit dough is formed.
Place large spoonfuls of the mixture well apart in the prepared baking trays and flatten slightly using the back of a spoon.
Bake in the pre-heated oven for about 15-20 minutes or until golden brown and just firm to the touch.
Cool on a wire rack, then store in airtight container.

Nigella's biscuits are fab, but you need to be prepared in advance because the mixture needs to be chilled before use. I double the mixture and keep some in the freezer for unexpected school fetes and bored evenings. 90g softened butter, 100g caster sugar, i egg, 200g plain flour, .5 tsp baking powder. cream butter and sugar, beat in the egg, stir in the flour mix together, form into a blob, wrap in cling film, chill for at least an hour. Roll out on a floured surface, cut out and bake for about 10 minutes in 180c oven. They need to be browned round the edges. They will still be soft in the middle byt they'll harden up as they cool.

These are really yummy

1.5 oz brown sugar
2 oz butter/marg
3 oz oats
1/4 tsp bicarb

Mix in big bowl (use your hands - get messy) - the more mixing the better.
Form mixture into balls and place on baking sheet.
Butter the bottom of a glass and dip into bowl of sugar; then flatten balls with glass.

Bake 10-12 mins at gas 4 (350).

On red-nose day I add red food colour and decorate with 1/2 glace cherry (otherwise they look like slices of salami!). I used green food colouring once too, and they looked like some sort of cabbage fritter! We had great fun pretending they were.

shortbread

6oz plain flour
1oz cornflour
4oz butter
2oz caster sugar

cream sugar and butter together ,then mix in both flours. Knead everything together and roll out on a floured board. cut into whatever shape you fancy and cook in oven on 180 degrees c for about 7 mins ,but watch it like a hawk cos any bisuits can burn really quickly.

i press choc chips into the tops sometimes

cook them on a sheet of baking parchment if you've got it ,really saves on washing up

will post some more recipes after lunch

chewy choc chip cookies

bag of choc chips or choped up choc bar
4oz butter
3oz caster sugar
2oz demerera
1 egg
5oz plain flour
1tsp baking powder
pinch salt

melt butter in microwave for 15 secs ,beat butter in sugars, beat egg into butter and sugar ,then beat in all other ingredients. put small spoonfuls on baking parchment ,leaving room for them to spread quite a bit. cook on 180*c for 8 ish minutes ,but watch them so they dont burn

millions of calories but totally yummy!

oaty crunch

4oz butter
3oz caster suagr
4oz sr flour
2oz oatmeal
2oz oats can use 4oz just oats if no oatmeal
1tsp baking powder
big squeeze of golden syrup ,about 1 tblspn
little splash water

microwave butter and syrup for 20 secs and mix everything together apart from the water. then add water if it seems to need it. use your hands to make little balls and squash them flat on baking parchment leaving room for them to spread .cook for 8ish mins on 180*c ,should be golden not brown

i doubled the recipe yesterday and it made 34 ,only about 7 left now
