I'm going to make some butternut soup

first time I'm going to make this. Love butternut soup but never made soup in my live. got a recipe of my aunt.
wish me luck! will tell you later how it is.

luuurrrve butternut soup - usually do one with curry spices - will look in to see how yours went

I did some yesterday from Good Housekeeping and it was yummy. More for lunch today to look forward to.

I made Delia's butternut squash and roast sweetcorn soup this weekend. Yum. So velvety and autumnal.

2 medium butternut squash
1 granny smith apple
2 medium onion
50g butter
750ml boiling water
7ml salt
7ml mild curry
40g flour
pinch nutmeg
2 cubes of chicken stock
500ml milk

Peal butternut and apple and slice into blocks.
chop onion. fry in butter.
add curry.
add butternut and apple and fry.
add nutmeg and flour.
add stock to water and add to milk and salt. add to butternut.
put on mild stove untill butternut is soft.
blend til smooth.

butternut squash makes the best soup ever - it goes all lovely and velvety and smooth. I either make one with stuff like sage, rosemary and thyme or with ginger, cumin and ground coriander, with fresh coriander to garnish.

I've recently discovered butternut squash and made butternut ginger and orange soup a few weeks ago. I loved it, Dh wasn't too impressed, said it was too tasty.
I can put the recipe on tomorrow if anyone is interested. It was very easy.

Came out ok. Tasted great, it just wasn't as smooth as I would have liked it. DH said I should stir it alot more.
Having leftovers tonight.

Soory for the delay but I in searching for this thread I found the recipe had already been posted on another... quick cut and paste!!

It's from the covent garden soups for all seasons book

I made it for anetenatal friends to day and swapped the cream for Total greek yogurt and it was a good swap. It is quite rich.

Butternut squash, orange & ginger soup

4 tablespoons olive oil
1 large onion, finely sliced
1 clove garlic, crushed
1 medium butternut squash, peeled & chopped
1/4 teaspoon ground ginger
565ml (1pint) veg stock
100ml (3.5 fl oz) orange juice
6 tablespoons single cream
salt + freshly ground black pepper

Heat the oil in a pan, add onion + garlic, cook til soft (without colouring)
Add buttnernut squash + ginger and cook gently for further 5 mins
Add stock + orange juice, bring to boil, cover + simmer for 25-30 mins til squash tender
Blend until smooth
Return to pan, add cream, season to taste. Reheat gently for 5 mins + serve.
