'Deli board' ideas please!

Not a recipe request as such, but..we are hosting the starter at a 'Safari Supper' for 6 in a couple of weeks (it's where you go to one house for a starter, a different one for main course, and another for pudding, and you don't know until it's time to go where you're going).

It's too faffy to cook, so I wanted to get a couple of really big wooden boards, and lay out some 'deli' food that people can help themselves to. I have a couple of ideas but would like some more!

I don't want to do salami as that is really boring, but would like things that (ideally) I can heap up or put in a pot, and would like a few 'different' things...am toying with a mezze type theme but am running out of inspiration for meaty things!

Here is what I've got so far as ideas:

Hot pitta breads sliced up
Houmous, tzatziki and oil/balsamic vinegar for dipping
Olives
Falafel?
Crayfish tails in lemon mayonnaise
Tomato and basil salad with mozzarella pearls

I don't mind doing some easy cooking. I also don't know how much to do per person, TIA for your input!!

I should also say that we can't do 'sit down' food as we don't have enough chairs for everyone to sit on

Asda do tinned stuffed vineleaves v cheap, you just bung them on a plate et voila, a vegan/dairy free treat. Similarly the big fava beans in tomato sauce.
Greek theme is good, use oregano instead of basil. The jars of feta in olive oil are good or the Appetina mini soft cheese bites. Grilled halloumi slice on a bit of thick ham?
Just put out loads and scoop everything back into the fridge for lunch the next day.

What about doing a huge pot of chilli and providing throw away bowls?

That guys, bouquets, some great ideas, will look out the vine leaves as they would go well, ditto halloumi, didn't think of that, my fave! Thanks for the ideas NBG, I am not sure if it would be the right thing for a starter but would definitely work as a main course, I adore chilli
