Planted some thyme a while back and it's growing really well but need some recipe ideas now to cook with it! Thanks, laloop

Add it finely chopped to homemade breads, savory scones ect. Goes well with most stews and casseroles.
Use to make sauces.
Put loads ina bottle of wine vinegar and you get flavoured vinegar.
Roast vegetables with it! A fave in my house.

Nigella's Linguine, Chestnut Mushrooms, olive oil, lemon and thyme is the most delicious supper. Google Nigella + Express + Linguine and you will find it.

Thanks, will have a look at that site now ComeOVeneer. Shrooms, thyme flavoured vinegar sounds good. Do you think I could use some to infuse olive oil too? Have loads of rosemary as well, would this work like that? Thanks again

Nigella raved about this recipe on telly the other night....remember though.....you have to eat this with 'joy in your heart'.....

steamed courgettes dressed with olive oil, lemon juice and rind and thyme. Salt and pepper.

This dressing is also a good marinade for baked/grilled fish.

Yeh deffo for the olive oil - now you're thinking! With whole garlic cloves in there too - but warm the oil and flavorings together very gently first so that they infuse better. Not to cook - just to warm!

Some great ideas, can't wait to try them, thanks everyone. Marina, would you mind posting the recipe for the risotta, sounds yummy! Going to be making some infused oils and vinegar this weekend too .

laloop, I'll dig it out - it's one of dh's. I think it basically involves a standard risotto base for four, plus 4 fat courgettes, a bunch of fresh thyme, and some saffron if you have it.
Ds calls it dad's fluorescent risotto because of the lovely colours

If you like fish, get a small trout and stuff a big bunch of thyme in its tummy and roast it. Yum.

I did chicken liver pate with thyme yesterday - it was a Delia recipe and only used about a teaspoon of thyme for 250g of livers, but if I did it again I would have about 4 times as much thyme so you could really taste it.

Have you done any of Nigella's other Express recipes that you would recommend Sydney B. I did the chocolate mousse and felt a stone heavier after I'd eaten my wine glass full!

Thanks again everyone. I'm thinking of buying the Nigella Express book, mwamwa, have been enjoying the new TV series. Have you tried many of the recipes?
