My favourites are:
Italian style - pesto instead of butter, mozzarella, tomatoes, lazy crushed garlic
Brie, quorn ham and cranberry sauce - usually after Xmas to use up the cranberry sauce
Quorn turkey slices, sliced cold sage & onion stuffing and cranberry sauce - as above uses the cranberry sauce and I LOVE stuffing
Peanut butter and strawberry Jam - variation on pb&j
Fried link sausage (as I’m veggie now linda McCartney originals work best for this) fried lightly on outside then sliced ALMOST in half length ways to “split” them and then fried cut surface down, fried egg and brown sauce
Fried sausages as above again but this time with fried onion and thinly sliced red peppers.
Sandwich spread and cucumber is one I’ve been enjoying recently
Cream cheese and sun-dried tomatoes on a bagel is yummy!
Best on a baguette - thickly sliced mushrooms, sliced pickled garlic (look in the Polish section in supermarkets or Polish food shops), thickly sliced sweet pepper and mayo - sounds weird trust me it’s amazing!
My veggie “Reuben” sandwich - quorn pepperoni (pastrami substitute), sauerkraut, my “Russian dressing” (ketchup, mayo, paprika and garlic), emmental cheese on toasted rye bread (hard to get a good one in Uk to be fair) - if you can achieve this you will be rewarded with a taste sensation
More classic/boring but tasty - mature cheddar (preferably really strong Scots cheddar), Mayo And sliced gherkins
