White:

1tsp yeast
500g flour
1tsp salt
1 tblsp olive oil
1 tblsp honey (or sugar)

oil and honey not essential but keep it fresher a bit longer.

makes a large loaf

Will have to check my book for wholemeal but have dd2 glued to my lap at the moment so will have to do it later (unless another kind soul comes along first!).

500g is about 3.5 cups

And don't forget to experiment with adding other ingredients:
100g sundried tomatoes and a handful or two of chopped basil
Smashed chickpeas
sub 100g of flour for chickpea flour
add some finely chopped rosemary and sauteed onion and garlic
Cinnamon and raisin
oats and chopped dates
sunflower seeds, millet, any seed you like!
Take out 50g flour and add mashed potatoes!

Wholemeal - same but extra 1/2 tsp yeast and 25ml water.

You're also supposed to add vitamin C powder but I never have any .

Tbh none of my lot like 100% wholemeal so I often do half and half white and wholemeal.

What make of breadmaker? Some have different instructions.

For a Panasonic it's basically:

1tsp yeast
500g flour
1.5tsp salt
1tbsp sugar
2tbsp milk powder
25g butter
350ml water

I modify it by using 1:1 white flour and wholemeal flour, reducing salt to 1tsp or slightly less, replacing sugar with any other sweetener, replacing butter with oil ( and using 30g), not measuring the milk powder but just chucking it in (you can't use too much), adding up to 75g of seeds.

Using more than half wholemeal flour needs the addition of a teeny teeny pinch of Vitamin C powder and 360ml of water

Try replacing sugar with honey, butter with sunflower oil, and adding 50g sunflower seeds.

Ooh yes, sorry - forgot the water! 350ml (but I guess you know that now!)

Mine is Panasonic but I don't tend to follow the recipes in their book. I bought "Fresh Bread in the Morning" (or something similar) which has better ones .
