Isn't fresh mayonnaise made with egg yolks? Have to be careful if pregnent etc with raw eggs though.

I've never tried to make fresh mayo. Buying a jar seems easier

use to bind biscuit mixtures - makes it richer than whole egg. Add to a whole egg to make scrambled egg. (I assume you have used the whites for meringue or similar?)

yolk plus couple tsps milk in a cake - but need some whole eggs too

use to glaze pastry

mix in with mashed potato instead of milk, or agian use to glaze mash on a cottage pie

how long do they keep in the fridge?

i use a lot of whites to make omlettes for dds - they are allergic to the yolk. it brings them out in a rash and they vomit. but not in cakes etc it seems. just cooked 'as an egg' iyswim

so i cam use it for cakes, thanks
not sure if i could use it inmashed pots tho

Friend of mine's DS had the same reaction to very eggy things like omeleet or quiche, but could eat cake. He is nearly 6 now and seems to have grown out of the allergy.

I tend to use the same day, or maybe a day later. will go and consult Delia

I use them to make mayo, it isso much nicer than the stuff from jars.

the worst reaciton they have is with mayo
thats good to ehar that they will prob grow out of it

Delia says that they freeze well, but I have never tried it.
