Ideas for carb-free dinners, please

We don't get to eat until quite late in our home, and I can't sleep after carb-loaded evening meals, so we've been eating no-carb or low-carb evening meals for a while. I'm sooooo bored of eating the same things over and over and over. Can anyone suggest any good meals?

We do eat quinoa and breadcrumbed stuff (usually very little bread is needed) in the evenings.

Please help! Thanks.

An Omlette?
Cheese Souffle?
Accompany both with a salad if you are doing "low carb" as opposed to "no carb".

A beef in red wine casserole? Serve with steamed veg if you are doing low carb...

Curry/Spag Bol/Chilli with shredded steamed cabbage instead of rice/pasta.
Pizza made with courgettes sliced lengthways as base (part cook courgette first).
Shepherds/Cottage Pie with mashed cauliflower instead of potatoes.

Hecciesmum, thanks also for your suggestions. I've never done a souffle before - is it hard? I eat fish but not meat.

Curry! A good veggie curry or stir fry with tofu or cashew nuts and plenty of spices is good if you don't want the carbs. Both are good served with quinoa as well.
