Sausage casserole

I usually use a packet mix for sausage casserole, but would rather do my own.
Could anyone help me out with their sausage casserole recipe?

We normally havit when db invites himself for tea and offers to cook - it's his signature dish!! (he also puts a bit of Worcester sauce in but I don't bother)

Cook sausages as normal.

Fry together onion and carrots. When softened, add tablespoon of flour, salt and pepper and any herbs that you like.

Add cider, and stir until you have a lump-free sauce (relatively thin because it's going to cook for a while).

Cut sausages into chunks and add to the dish.

Cook in the oven for about half an hour till carrots are soft.

thomcat · 23/09/2007 21:36

I bung the following in a huge pot

browned sausages
red and yellow peppers
chestnut mushrooms halved
carrots
swede
onion /shallots

mixed with stock / red wine / fresh thyme

served with sweet potato mash

thomcat · 23/09/2007 21:37

I don't precook anything other than sausages.
Cooks in casserole pot in oven for about 2 hours.

FLIER · 23/09/2007 21:49

thanks thomcat, sounds lovely, hope to try out something from all of these recipes this week.

I fry sausage and onion in casserole dish/slow cooker, then add carrots, swede etc, peppers, mushrooms, tinned toms, kidney beans, herbs, worcester sauce etc and cook slowly. Is very nice. Generally I am lazy so serve with jacket potatoes.

bozza · 23/09/2007 21:53

and celery

PeachesMcLean · 23/09/2007 21:56

My favourite:
Fry onions and garlic
Add glass of red wine.
Plus one tin tomatoes,, and a tin of baked beans.
Add browned sausages.
Simmer for half an hour and serve with mash and broccoli. Gorgeous and rich.

That's tomorrow's tea sorted then! Thankyou ladies!!! I was looking down the lentil and veg bake but this is a better idea, we've got LOADS of sausages in the freezer!
