Just want something basic but filling iykwim.

Honey lemon chicken chunks with rice.

Sounds good - how do i do then honey lemon part??

The other night I cut one into quarters, threw in a casserole pot with 2 chopped onions, 1 carrot, 1 and a half pints of stock and some rice.
Cook for hour and half.

lemons
honey
butter
pinch salt & pepper
maybe bit of garlic, or mustard (see what's lurking in your cupboard!)

Melt the butter, stir in the rest of the above so it's a sauce, chop up your chicken, throw the sauce on and cook.

All I would say is just check it after 1 hour to make sure you have enough stock left and the rice wont dry out.

What's wrong with just a roast - simplicity at it's best. We usually accompany with rice or potatoes and some kind of veg.
