Hello,

I'm looking for some new interesting salad recipes to enjoy in this glorious weather. I love salad but am not very good at making it interesting and somehow need to level up!

Please can you tell me what your favourite salad recipes are? Thanks

Someone asked this yesterday! I'll see if I can find it.

  • watermelon, halloumi (fried until just lightly brown), pinenuts and green beans. That's it! No dressing needed. I chop mine to 2cmx2cm squares, but you will see recipes leaving the watermelon in larger chunks. I just like to get a bit of everything on 1 spoonful Grin
  • mango, cooked prawns, avocado, lettuce leaves, spring onions. Again, I rarely put any dressing on this one.
  • blue cheese (saint agur sauce in a little tub is great), spinach or lettuce leaves, pear chopped
  • peach, prosciutto and lettuce/spinach and a drizzle of balsamic glaze. You can also add mozzarella, but I find it tasteless and doesn't really add anything to the salad
  • celery, dates, parmesan, almonds and optional drizzle of olive oil. I was sceptical, but this was really delicious.
  • roast pumpkin, pinenut, feta, red onion or spring onions, baby spinach and drizzle of balsamic glaze

Fresh spinach or rocket, toasted sunflower seeds, good quality olive oil and a tiny drizzle of balsamic vinegar.

Panzella is great, I buy punnets of mixed heriloom tomatoes and sour dough bread. Cut bread into cubes and drizzle with Garlic infused olive oil in a hot oven to dry out for a few minutes. Add halved toms to colander salt generously and let juice drain into bowl for 15 mins. Add olive oil to pan, gently sauté shallot and garlic, add red wine vinegar, tomato juice, salt pepper and a little more olive oil. Mix, all ingredients together and let stand for 20 mins. Serve with good mozzarella and chorizo for a summery lunch.
