Slow Cooker Bread and Butter Pudding

6 slices Fruit Loaf
2 oz each of cherries, crystallised ginger, cranberries
1 orange worth of rind grated
1 tsp ground ginger
2 large eggs
250ml single cream
2 tbsp butter

Preheat cooker on high. Butter a 2pt dish that will fit in your cooker. Spread the bread with butter and cut into triangles. Arrange half the bread in the dish then chuck in the fruit and crystalised ginger then the orange rind. Cover with the rest of the bread.

Put the cream, ginger, eggs in a jug and blend together. Pour mixture over bread and fruit. Let stand for half an hour. Place in cooker. Pour in boiling water so that it comes half way up the dish. Cook for 3-5 hours or until custard set.

You can also use mixed dried fruit. The fruit goes really plump and lovely.

What an interesting idea - never considered doing anything but stews in my slow-cooker! I might have to give this a try as it's one of my all-time favourite puddings
