I am in dire need of one-pot recipes that are easy and taste fabulous....... if you have the time, I would be SO grateful for your ideas!

My one and only is 'Spicy Sausage Casserole'...

It's a spicy smoked sausage casserole and it really is gorgeous and serves about 6!

Just put all this straight in to a large pan and simmer for 2+ hours. Freezes brilliantly.

2 x packets of 'mattersons' smoked sausage (it comes bent in to an oval shape!) - fridge section with ham etc. - Chopped in to mouth size chunks
2-3 tins kidneys beans - rinsed
Bunch of fresh parsely (size you buy in tescos) - chopped
3 chopped onions medium

1 jar fresh tomato sauce - approx. 1/2 pint (the sort you can use to make pizzas)
Fill this up with water and then chuck that in too

1/2 tsp cayenne pepper
1 tbsp garlic powder / granules
1/2 tsp black pepper
approx. 1 tbsp 'hot' sauce - i.e. piri piri or chilli sauce - use more or less whatever you like
1 tbsp worcester sauce

Simmer away for 2 hours minimum - I leave the lid off for some of it because it needs to reduce down to get the flavour and it should be quite thick rather than chicken casserole consistency! Can always add more water if needs be!

Serve with rice or whatever.
