Wintery meals for menu planning

SOrry to be depressing but!
The time is a-coming to get rid of the salads and get hearty winter food back on the menu.

We had Spicy Sausage Pie tonight which EVERYONE loved.

WHat's on your autumn/winter menu?

lots of hearty soups:

leek and potato
pumpkin
cauliflower and blue cheese
tomato and white bean

Shepherd's pie - yes. My spicy sausage pie is shepherd's pie where the shepherd's are replaced by sausage and beans

I LOVE Nigel. Though I'm sure he wouldn't love me.

We've just had courgette risotto which is summery but also suitably wintery as stodgy and buttery. I like squash risotto best of all.

Hmmm, butternut squash roasted, then mashed with creme fraiche, chives, parmasan then browned up in the oven....

It's not a Nigel though:

1 butternut squash. Cut in 1/2 and scoop out seeds. Bung in roasting tin. Drizzle with olive oil and add salt and pepper. Roast for 45 + mins at gm 6/ 200c till soft.

Take out of oven and allow to cool a little bit. Scoop out flesh into a bowl and mash with 3 tbsp creme fraiche 3 tbsp chopped chive or some sage (not as much as chives as stronger) and parmesan.

Spoon ity back into the squash skins and bake for anohter 15 mins or so till browned a little on top.

Not quick but quite easy. Good with winter salad leaves and a nice dressing.
