I am wondering if I can freeze the innards (not the whole fruit) as have an excess of them and they're getting past their best.

yes, but they'll probably only be good for cooking or smoothies once thawed

Yes. Cut in to halves and scoop out the juicy pulp and seeds. Weigh the seeds and pulp and mix with half their weight of caster (superfine) sugar. (e.g. if you have 100g/4oz pulp and seeds, add 50g/2oz sugar.)

Spoon in convenient quantities into small, rigid containers. Remove the air, seal and label and freeze.

Storage time:12 months.

To thaw and serve:
Thaw in the fridge overnight or at room temperature for about 1 hour, then add to fruit salads, serve with whipped cream or spoon over ice cream.

HTH.

why do you need to sweeten it so much?

Pennies · 16/09/2007 19:00

Great - thanks for that NAB3 but second the query re. sugar. Why?

No idea. I am assuming to help keep it sweet. Just copid from my freezer book. Maybe try some without and see how it works.

Wil do! Thanks again!
