60-minute Nice Pudding suggestion for DS2's next food tech lesson, please?

Has to be completed in 60 minutes.

I am the unpuddingest person in the world so I don't have a clue!

Lovely lemon curdy pudding

Popsy peels the page open - it is sticky and splattered from many messy makings of this pudding!!!

Ingredients
55g/20z butter
115g/4oz sugar
grated rind and juice of 1 lemon
2 large eggs, separated
55g/2oz self raising flour
285ml/1/2 pint milk

Method
Preheat oven at 200/gas 6. Cream butter, sugar and lemon rind in a mixing bowl. Add egg yolks and flour and beat in, then add the milk and 3 tablesppons of lemon juice and mix well.

WHisk egg whites on separate bowl until stiff (this is the really important bit!!). Miz well but don't overmix. Pour into a buttered oven proof dish (I tend to use a pyrex casserole dish....), stand the dish in a roasting tin about a third full of water (ponce points for 'bain-marie' usage) then bake in your preheated oven for about 45 mine (argh - time factor) until the top is set and spongy and is a nice golden colour.

NOTE: the bottom is meant to be soggy and custardy

Will now actually look for some recipes that can be done in 60 mins lol!

Thanks for those popsy but it does look as if both of them are a bit too long - how long does the choc cambridge cream take? (the pineapple and hot choc sauce doesn't go with it, does it? )

Wendy - so sorry - can't find rice pudding recipe - it was a Waitrose one I think and done on stove top,so quite quick, and flavoured with cardomom (probably crushed seeds in pestle and mortar)...looked at the Queen of Puddings recipe but it's over an hour - 1 hour in oven plus about 20 mins for a meringue (it was a recipe from a mumsnetter too cocococo if she's still around - and truly delicious )
