I'd like to make Nigella's chicken nuggets, but can't get hold of buttermilk

So what can I use instead? I really want to make a huge batch so that I can freeze some. I usually just do the flour-egg-breadcrumb thing, but I love the sound of hers. Would yogurt mixed with milk work? Could I freeze that uncooked?

I do teh Ritz cracker thing. I just use plain yogurt. Love them

look buttermilk substitutes I have used before when making soda bread and is fine

Cut up chicken, shove in a bag with yogurt, squish up, put in fridge for 1/2hour, take out, roll in bashed up Ritz crackers, bake in oven, eat all of them.

Nigela advocates coating nuggets in crushed ritz crackers rather than bought or homemade breadcrumbs. And - poncey as it may be- it does make things taste hugely better. (And my kids love crushing as well)
I have actualy translated the idea to oatmeal crackers as well (originally because I'd run out of ritz rather than from any intentional idea of cutting down on salt) and that workd equally as well.

thanks - think my kids would love that too - they ahve been asking me to make home-made nuggets again so will try it out...
