glut of courgettes

does anyone have a nice veggie recipe using chiefly courgettes?! I have about 10 I need to use up in the next couple of days...

Jamie Oliver has a recipe for Courgette bread in one of his books (uses about 6 courgettes I think)

Put them in a frittata, summer risotto with other veggies.

They will keep for a while in the fridge anyway won't they?

Chop, roast with oil and seasoning, then freeze to add to all those italian recipes.

fry with garlic in olive oil and butter. Blend. Add parmasan and cream and salt. Stir into pasta. Its really nice.

there's a chutney (or glutney) recipe by hugh fearnley whittingstall which you can put anything in (inc green tomatoes and courgettes)..haven't got the book with me tho

courgette cake

60g raisins (optional)
250g courgettes, weighed before frating
2 large eggs
125ml veg oil
150g caster sugar
225g sr flour
0.5 tsp bicarb of soda
0.5 tsp baking powder

icing

200g cream cheese
100g icing sugar sieved
1 lime juice
2-3- tbsp chopped pistachios

fillin- suggested lime curd or or leomn curd

method

oven gas mark 4 / 180

plump up raisins with water if using

wipe courgettes (not peel) and grate coarsely
rest them in a sieve over sink to drain
place eggs, oil, sugar in a bowl and beat until creamy. Sieve in fliur, bicarb and baking powder and beat until well combined. Stir in courgette and raisins. Pour into two 21cm greased sandwich tins, bake for 30 mins until slightly browned and firm. to touch.

Fill with chosen filling,

ice with cream cheese icing: beat the cream cheese in a bowl, add icing sugar, beat then add lime juice to taste

4 courgettes, one aubergine, 2-3 onions, maybe some mushrooms or peppers (all diced)

fry together with garlic

add 2-3 tins tomatoes

cook for ages (can do in oven or top)

serve with lots of greated cheese and naan bread/flat bread

freezes reasonably well, goes slightly mushy

(can zap leftovers and add cream and make a pasta sauce)
