A nice vetatable soup recipie please - i usually just bung anything and everything in but id like something more refined! lol

DP insisted we have southern fried chicken pieces for tea and they made me feel ill. So I want a nice frsh soup with crusty bread tomorrow night!

Do you add red lentils and some potatoes to your veg? Makes gorgeous soup!

minestrone

1. chop carrots/celery/onion/green beens/1 clove garlic sweat in olive oil
2. add 2 chopped tomatoes and 2 pint stock
3. serve with a tbsp of pesto in each bowl

middle eastern chowder

1. chop 1 carrot/1onion/bunch parsley & coriander and sweat in olive oil.
2. add a handfull of slices stewing meat or chicken breat and spices: 1tsp cumin/1tsp tumeric/1 stick cinamon
3. add 2 pints water 1 stock cube and simmer 1 hour
4. add drained can chickpeas and lentils and adjust seasoning
5. serve with tbsp yogurt and sprinkle fresh coriander
