Aubergines recipes or suggestions please

I have 2 aubergines that came in my veg box and i am not sure what to do with them. Any suggestions /recipes.

cube them up and add to bolognese?

make moussaka?

slice them 1 cm thick, pop onto a baking tray, drizzle with oil and bake for 20-25 mins? nice served with tzatziki (greek dip)

You can make a lovely dip/spread. Bake an aubergine or two for about 30 minutes, or until cooked soft, scoop out the flesh and blend with garlic, lemon juice, salt, pepper and tahini ( sesame paste ) - think that's optional. Lovely with bread sticks or vegetable crudities, or on crackers or oatcakes.

Oh you lucky thing, I love aubergines.

Maybe try slicing them thinly lengthways, oil lightly and put in hot griddle pan until striped on both sides. Lovely served with a bit of lemon juice and pepper, or add to pasta with aubergine pesto. Or if feeling more adventurous, add a dollop of mashed feta/chili/coriander etc to one end of griddled aubergine, roll up and serve as starter/canape/side dish.

Or cut up into chunks and add to chunked peppers/red onions/courgettes and serve as roast mediterranean veg with mint and crumbled feta on top

There is dip you can make with baked red pepper and aubergine - let me know if you're interested and I will fish the recipe out

We are veggies, so I always use aubergine in curries, as it's nice and chunky, soften first in frying pan with aome oil then add curry paste etc.

Parmigiana - layer sliced aubergines (firstly fried in olive oil) with tomato sauce and mozarella. Repeat and sprinkly top with parmesan. Kind of like vegetable lasagne but without the pasta!
