Have made some fruit cake (which I always make) and some viennese whirls (dh favorite). Wanted to make some nice biscuits but cant find anything yummy.

quick emergency biscuits:
1oz sugar
2oz butter
3oz flour
cream butter & sugar, stir in flour, knead, roll out, cut out, 10min gas 4.
you can ice them afterwards or add raisins, orange zest, choc chips etc to the mix to tart them up

gingerbread biscuits (make good men, but particularly fab for parties made into little stars served on cocktail sticks stabbed into foiled spuds)
melt together:
2oz butter
2oz soft brown sugar
2 level tablespoons golden syrup
stir in:
6oz plain flour
1/2 teaspoon ground ginger
mix with spoon then bring into ball with fingers
roll out thinly straight away
cut out
greased & lined baking tray
gas 4 12min
cool still on the paper.

Melting Moments:
4oz butter
4oz sugar
5oz SR flour
1/2 beaten egg
few drops vanilla extract
porridge oats

Cream fat & sugar, beat in egg, add vanilla & flour.
Roll into small balls w wet hands and coat in oats.
Flatten slightly onto greased baking sheet (they spread a lot).
15-20min gas 4.

i still make these biscuits as they are a great standby - the addition of half a glace cherry to the top of each one is a nice touch as well
