mmmm leeks

Use like spring onions. Chop off the very end (rooty bit), remove tatty outer leaves and check for mud between the layers, then slice. Use the white bit and some of the green part, think it gets tougher further up. Fry, roast, chuck in casserole, whatever.. they don't take long to soften up.

What are you making?

I usually remove the first outer layer, slice them finely and cook in some butter (or Olivio) until they are soft.

Use the white part not the tougher green part - unless you are making soup or something like that.

CHop and Put unto a pyrex bowl, and cover in cheese sauce. Cover and bake until soft.

I make a pasta dish with leeks, mushrooms, cream and a bit of white wine. It's very easy.

Or as Escape suggests, as an side dish with cheese sauce - I sometimes serve it with sausage and mash.

Make a lovely soup too with potatoes. Prepare & chop, soften in a little butter, add veg stock & chopped potatoes. Simmer until potatoes cook through & whizz in a blender. Swirl in a touch of cream if you're feeling naughty
