help me make something with my left overs!

I made soup yesterday and have left a packet of uncooked carrot, an uncooked leek, one potato, 1/2 uncooked white cabbage and some celery - now what can I do????

Veggie bake?
layer thin slices of each veg, followed by layer of potato (sliced very thin if you've got one!) Could put some herbs in if like. and pour over cheesy white sauce with a bit more cheese grated on top. Bake 40 mins to 1 hour. I tried this with plain yogurt and the yogurt curdled so don't try that!

Bubble and squeak

Boil and smash the potato,finely chop cabbage, carrots and celery and cook (boil or steam).

Heat the oil in a large frying pan and cook leeks until soft. Add leeks to the potatoes, carrots, celery and cabbage and mix well.

Fry over a medium heat, turning occasionally, for 15 minutes or until golden brown.
