Assume the basic method is simpy to wilt with a little water and maybe some butter but recall seeing a recipe for spinach done with cream & nutmeg. Any ideas please. TIA

You don't need much at all and it takes hardly any time at all, I put it on a low heat with a knob of butter, nutmeg if req'd and lots of black pepper and wait for it to wilt, if you want to add cream stir it in afterwards when it has collapsed down.

spinach soup

Ingredients
1 tbsp olive oil
1 garlic clove, crushed
3 spring onions, sliced
1 handful of spinach leaves, shredded
120ml/4fl oz vegetable stock
1-2 tbsp double cream
salt and freshly ground black pepper
2 slices of bread, toasted in a griddle pan, to serve

Method

  1. Heat the oil in a pan and add the garlic and spring onions. Sweat for 3-4 minutes over a low-to-medium heat.
  2. Add the spinach leaves to the pan, stir well, and allow to cook for two minutes until wilted.
  3. Add the vegetable stock and simmer for 8-10 minutes.
  4. Stir in the cream, season to taste and serve in a soup bowl, with the slices of griddled bread as an accompaniment
