Ingredients:

sunflower or olive oil
an onion
a clove or 2 of garlic
tin of tomatoes
stick of celery
carrot
4 oz red lentils
bay leaf
marmite
black pepper
potatoes
2 oz grated cheddar cheese (optional)

Method:

peel and chop the onion. Saute in the oil in a flameproof casserole till transparent. Crush and add the garlic. Clean and chop celery, peel and chop carrot. Add both. Add tin of tomatoes, bay leaf, lentils and a little water. Add marmite if liked, black pepper and bring to the boil. Simmer for about half an hour. Keep checking that it hasn't gone too dry. You may need to add some water if it does.

Meanwhile peel and boil the potatoes for 20 mins, then mash. You can add a little milk and butter if you like. When the lentil mixture is cooked - ie the lentils have expanded, turn off the heat under them and add the mashed potato on top, spreading it out with a fork. If you want cheese on top add it now and put the whole thing under the grill till the cheese has melted and it's a bit crispy on top.

ps i think brown lentils are nicer for this, since they hold their shape, or continentals

just rememvbered that i used to make it with blackeye beans .
truely scrumptious.
only problme dc's did nto like it! might try it again sometime though

Ebandstand - have just looked at your profile and our dc are v similar ages too.
Don't know why you should be about similar nickname though. Great minds and all that. Agree with you about continental lentils too: more flavour.
