I believe people stuff them. Tomato, rice, cheese sort of thing? Or you could try a spicy lentil mixture?
Or pretend it's a courgette, chop it up and use it to bulk out everything you make for the next week.

Big Cook and Little Cook made a marrow telescope today. It looked delicious. Not.

Slice in half length ways and remove the inside, roughly chop about half of the inside into small cubes. Fry a chopped onion, lamb mince until brown add the cubed marrow and a generous amount of cumin, mixed herbs and tomato paste. Spoon mixture into marrow shells, top with white sauce, then sprinkle on a mixture of breadcrumbs and grated cheese. Pop in a medium oven for about 45 mins until golden and bubbling.

I slice into 2" rings take out the seeds.

I stuff with a spag bog sauce top with grated cheese and breadcrumbs. Then bake for about 40 mins. serve with a green salad.
