I got a leg of lamb out of freezer to defrost and was going to roast it but it hasn't defrosted in time so have cut it into chunks to aid the defrosting process.

Have gone through cupboards and have found the following:

tin of toms
mix summer veg - fresh (peas, broad beans, beans, leaks)
carrots - fresh
red wine
new pots

clearly this indicates I should bung it all in a casserole and hope for the best but anything else I should add - some herbs obv. Anything else which I may or may not have ?

If I were you I would do this:

Have you got onion and garlic? If so fry them in olive oil and salt and pepper. Just as they start to turn see through squeeze a lemon on them (if you have one).

Toss the lamb in a little flour and salt and pepper. Then add to the onions and garlic. Then add the other veg. Then toms and wine. Do you have any stock or tom puree to make it richer? If so add.

Them simmer for as long as possible.

Good luck.
