Well cut your chicken up, blend it a bit so its a bit like mince, throw in some onion, apple, celery, garlic, courgettes, anything you want really, roll into a ball, cover in whisked egg if they arent very sticky and then in flour and fry, grill whatever.

excellent Annabel Karmel recipe -

375g chicken breast cut into chunks
1 large onion
2tbsp chopped parsley (works just as well without)
1 small apple
45g fresh white breadcrumbs
1 chicken stock cube
60g dry breadcrumbs
60g cheese and onion flavour crisps(works well with ready salted too)
vegetable oil for frying

put first 6 ingreds. in a food processor and chop for a few secs til well combined. Shape mixture into a flat disc.
Use a 6cm biscuit cutter to press out heart shapes(or any basic shape). Mix together dry breadcrumbs and crisps(well crushed) on a plate and press the chicken mix pieces into the coating.
Heat enough oil for shallow frying in a large frying pan. Add the nuggets and cook for about 6 mins, turning occasionally until lightly golden and cooked through.

Delicious! A winner with our whole family.

Or do what I do. Cut into chunks. Dip in flour, dip in egg, roll in bread crumbs and bake in oven.
Not so 'foodie' but great for child with massive intolerances and extreme pickiness ( and takes about a third of the time)

I use milk if I have no eggs but just put it on with a pastry brush rather than dipping them in.

Ahem, you need Enid's recipe
