Jamaican chicken rice 'n' peas recipe?

My friend's mother in law made this for us for her son's birthday and it was absolutely gorgeous! Unfortunately it is a secret recipe so I was just wondering if any Mumsnetters have one?

my friend also cooks this but won't give up the recipe!! All I can see so far after trying to watch her is she cooks the rice in coconut milk...

Hi. I've got Jamaican family and rice and peas is my fave. The chicken is probably jerk-quite complicated ingredients but you can probably find a fairly decent ready made mix.
Real rice and peas is cooked with an oxtail but I always left that bit out!! Basically bung in thyme (couple of sprigs),spring onions, creamed coconut,scotch bonnet (wicked chillies) and your "peas" the ones they use are little black ones-can't remember what the name is-but you can use kidney beans or choose something off the supermarket shelf in with your rice. Hey presto! Not quite authentic but if you live somewhere with a West Indian community you'll be able to get all the "real" ingredients I would have though. It's a very long time since I've cooked this as you can tell and if a real Jamaican comes on here they'll shoot me down.But my aunt showed me how to do it and it's not far off! Yum.

I have some jerk that's in powder form (bought in US) so should I fry the chicken in the jerk and then add the rest?
