Made too much mashed potato....

Can I keep it in the fridge tonight or freeze it? Was thinking if I can keep it in the fridge until tomorrow, then I'd cook some fish, mix it in & then freeze it. Would this work does anyone know?

I beat an egg into it and freeze it in spoonful sized lumps on trays. Then bake them in the oven as and when we want.

You can pipe the lumps onto trays if you want them to look pretty.

i just keep it covered in fridge, fave recipe is mix wih cooked spices and then dip in batter, made with water and gram flour and fry to make dumplings ultimate comfort food

mix it with some plain flour, roll out into flat disc and cut into whatever shapes you fancy - shallow fry for 5-6 mins turning occasionally.

You now have potato scones - can be frozen.

I often freeze left over mash - just wrap in cling film in portion sizes, then defrost and microwave when I want it. Doesn't look as pretty as themoon66's piping though!!

Thanks everyone, I've popped it in the fridge and will either do a small shepherd's pie or try the potato cakes!
