any ideas for nice salads and a nice pudding for BBQ tomorrow?

am feeling very uninspired. My mum and dad are coming over so want to make an effort but dd will want to help prepare - she is 5 so not too complex!

Brownies are always good, and any leftovers can always be eaten for lunch next week!
DS (6) like to help make trifle, that's not too complicated.

For salads, what about Jamie Oliver's couscous and chargrilled veg salad? Ver lovely and nice and summery

I always use Nigella Lawson's recipe from The Domestic Goddess. Do you have it? Makes a LOAD of brownies!

Roasted veg with cous cous salad (can chuck in feta cheese to this and place salad leaves on top)

potato salad

new pots with avocado, cress and lemon juice

mozzarella, tomatoes and basil (or avocado)

tomato and onion with olive oil

Fresh pineapple with maple syrup on bbq
strawberries and cream

yes I have that somewhere thanks. If my meringues go wrong it will be eaton mess!

greek salad is lovely too and not too hard so that is a goer too.

Salsa to stick in your burgers, chop a red onion, a couple of de-seeded chili's, scoop the pulp out of 4 ripe tomatoes and chop the flesh, stick in a bowl with the juice of 1/2 a lime and a lick of olive oil and chop some coriander in. Make it ahead tho' because the onion softens into the lime juice, which stops it tasting too raspy and strong.

I always want cous-cous with bbq's, or bulgar wheat tabbouleh or even quinoi? I think you can't go wrong with a grain salad, a leaf/green salad and a tomato one.

Eton mess, mmmm, sometimes do this with crimbled up shortbread instead of meringue.

yes, that would be a like a tabbouleh with feta? It's really god with a tzatsiki too. Yum

oh - our favourite pud atm (which I'm doing tomorrow)... put baked peaches/nectarines - bung in dish with knob of butter & dessert spoon of brown sugar on each peach. Roast for approx 20 mins. Serve with good vanilla ice cream. easy as pish and soooo good

I love the smell of peaches and vanilla. I'm getting hungry now despite having eaten a whole bag of Whizzer's speckled eggs and a brownie.

I know, I bought 4 bottles after you said that! I only got one bite in cornwall, when I wasn't wearing any so thanks for the tip, wish I'd put it on today, the one on my arm is as big as 50p now, so itchy.
