osso bucco, anyone?

Bought the ingredients but can't find my recipe! Can you recommend one please?

oh and by the way, I understand it's osso buco, not bucco. For what it's worth. Not that you lot are bothered - hmph!

sauce if I remebber correctly from a previous post you understand french?

it's the most brilliant recipe website........but it's in french.

from memory osso buco is

brown the meat on all sides and remove from pan

fry: onions and garlic and celery and carrots and one red pepper, all very very finely chopped in lashings of olive oil

add saffron threads salt and lots of pepper. throw in a glass of white wine, reduce.
Put the meat back in. Cover with water and simmer gently 2-3 hours.

Addd chopped parsley towards end.

...with some grated orange rind & fresh chopped parsley to serve! Spot on. It was delicious, btw.

I also added a massive tin of chopped tomatoes & some tomato paste. Used up half a bottle of wine, too.

paprika of course as in goulas,

you have to add it same time as saffron. About 1 good tsp.
