Quick - can I make blueberry muffins with plain flour?

Printed off the BBC recipe which says SR flour and 1 tsp baking powder - but looking at american recipes they say "flour" (but not which sort, so I assume plain?) and 2 tsp baking powder.

Don't want to waste the blueberries but have no SR flour - will they come out like rocks?

yes, you can make muffins with plain or self raising. normally if using self raising you half the baking powder (I think off top of head)

Yes, we made muffins last week with plain flour. Think we used about 3tsp baking powder and 1/2tsp bicarb.

my blueberry muffin recipe (from Muffins fast and fantastic - can heartily recommend it, says

10oz plain flour and 3 teaspoons baking powder.

i made blueberry muffins with plain + baking powder instead of sr the other week and they were like lead!

the nicest ones i've made are with strong white flour & baking powder...really moist & light

You have to make sure that your baking powder is fresh, as it loses its potency as it ages ... this is why a lot of recipes call for plain flour + bp rather than sr flour - and also why some recipes using sr flour also call for baking powder too - as the baking powder within the sr flour also dimishes in terms of its potency too.

i normally use sr flour as i'm lazy but if using baking powder its normally 2 teaspoons

blueberry oatmeal muffins my fave fave recipe
