Making welsh cakes - help!

Just got back from a week in wales where we got slightly addicted to welsh cakes.

The recipe I found is:
2oz butter
2oz lard
3oz caster sugar
8oz SR flour
1 egg
and "enough fruit"

I don't own a heavy bottomed frying pan, but I do have a griddle pan (but that would leave lines, yes?)

Should I just use an ordinary frying pan?

Do a test cake to see if your frying pan is up to the job. I wouldn't put them in the griddle pan personally as they need to cook through and I doubt the darker lines of pastry would be tasty.

No mixed spice in there? I would add a generous pinch along with the flour but that's just my preference. Let us know how you get on!

Mixed spice sounds good! I just know they won't live up to the ones we bought, but I do think they will be nice warm.

LL - it sounds a bit lke making pastry, you have to mix flour & fat to make breadcrumbs, add the sugar, then the egg, and then the fruit. Roll it out & cut into circles.

I'm sure they'll be lovely, but if you do a few test cakes you can alter the mix before putting the rest on, adding more/different spices, or a pinch of salt etc

They have turned out lovely... after I burned the first few. I feel like a greedy guzzler now, as I have eaten 5 already.

DS2 has helped me eat some, and said "niiiice" - he is almost two, so thats a good compliment!
