I have a dinner party on Tuesday <eeek> and I can't think what to cook because I think it's going to be hot hurray!

so I can't really do soup, too wintery.
also one person doesn't like anything spicy
and one person doesn't eat seafood, so there goes my usual crab cakes.
what can I cook that is low maintenance but impressive??

Inspired by Bristol's suggestion: slice potatoes length ways (like fat chips) and put around the chicken. Squeeze a lemon over the chicken and the potatoes. Slosh over a bit of oil and a few herbs. Stick the rest of the lemon in the chicken with an onion. Roast. Serve with a green salad.

Starters: would go with nibbles in this heat.

Pud: (repeating this from another thread but don't know how to link to another posting - anyone?) Warm fruit salad: - choose soft fruits such as peaches, nectarines, plums, apricots, blackcurrants. Slice the bigger fruit/half the smaller fruit (not th blackcurrants, obviously). Sprinkle with a little sugar and bake in moderate oven for 15 mins. Mix in rasberries once out of oven otherwise they'll go mushy. Optionally serve with the famous lemon drizzle cake and barbados cream (yogurt and cream whipped together, layered in a glass serving dish with dark sugar (anything, from demerara tp mucovado), left in the fridge at least a couple of hours, pref overnight and it the sugar will go a bit caramelly.

Barbados cream is GORGEOUS - forget everybody else's suggestions and make that! I do it with Nigella's baked plums but I bake them in port instead of red wine - yum.

OK thanks everyone if anyone is still awake I am going with:
the piedmont peppers
the lamb and couscous
some poached figs (a la Nigel Slater in OBserver yesterday) with the Boston Cream

ooh i had leftover barbequed lamb chops chopped into leftover cous cous salad that is very similar sounding to pph's for supper tonight (on rocket and salad with tomatoes and basil oil

It was deeeeevine

nigella's pavlova
the choc and raspberry one is nice but the Passion Fruit one is one of the most gorgeous things that I have tasted. Easy to do. Prepare in advance
