I have some smoked haddock, a pack of m&s roasted veggies and a vague idea it can be turned into a yummy meal, but quite how escapes me.

HELP!!

Have you flour eggs cream and milk?

If so, make a bechamel, add the fish, make pancake batter, and make creamy smoked haddock pancake serving the roast veggies on the side.

Or if that's a bit heavy mash some spuds and make fishcakes roast veggies and serve with lemon mayo?

PS if you do the pancake make the bechamel with the milk you poached the fish in.

Warm your haddock gently so it flakes easier, flake it, boil some floury potatoes, and mash them. Mix the fish roughly half and half with the potatoes, some parsley if you want, seasoning, and pat them into cakes. Sit them in the fridge for a while to firm up, beat an egg, and chop up some breadcrumbs.

Dip the fishcakes with one hand in egg, pick them up same hand and drop them in breadcrumbs, and use other hand to sprinkle crumbs over them - this way you save yourself wearing gardening glove sized chunks of claggy breadcrumbs.

When they're coated, fry them moderately in oil & butter. Num. You can freeze them, too, but put greaseproof paper between them

Oh, (I always add ps's to my recipes, it's very annoying, I know)

If the potato/fish mix isn't binding, mix in a little beaten egg or milk, but be careful, it turns into too much quite quickly

Not the one to ask on questions of de-frosting I'm afraid - I would have thought it would be ok, though.

the penguin thing rings a bell!I never knew did potato of doom, it popped into my head one day! Great minds I guess!
