Easy lunch ideas that aren't sandwiches

Hi

I'm starting to think that bread doesn't really agree with me, but I am stuck for ideas on what to eat for lunch. I need things that don't take lone, or I can't prepare the night before as I have a 6 week old baby and rarely get to eat my lunch without a background of crying!

oregonian, i realised that i often serve it with a blob of yoghurt if there's any around. and a bit of lemon zest wouldn't go amiss as well. [crap at writing recipes]

ok, 3 main elements, but huge number of combinations:

pasta (duh! obviously) but different pasta give different results. Try smaller shapes and less of it if you're not so keen

dressing: I tend to use mayonnaise (most often) or pesto or a french dressing. Or a comibination of 2 or more of the above!

"other stuff": my usual would be peas, sweetcorn and bacon. But sometimes do roast veg, or mushrooms, or peppers, or olives, or any combination of the above. Or anything else I've got.

But maybe you'll just never like pasta salad?

well my problem is that I see peas, sweetcorn, pasta, bacon and think 'yummy hot meal'

I like both hot and cold. Perhaps it's just not your thing.. shame, cos it makes an easy lunch if you've got leftovers.

yes, potato cakes... poached egg on potato cakes is really quick and tasty.

jacket potato and tuna (if you can remember to put the potato in the oven an hour before lunchtime )

warm pasta and tuna salad (can use wheat free) just pasta, tuna and some iceberg lettuce swizzled around in a pan (I add a pepper if I'm feeling adventurous )

quesadillas
tuna, mixed bean, and red onion salad
miso soup with ramen/oodong/buckwheat noodles and your choice of veg/meats
thai flavoured steak salad with papaya salad
soups, chilis
roasted butternut squash, sweet potato, and beetroot salad with goat cheese
vegetable tian (french version of a fritata)
smoked salmon with softly cooked scrambled egg and creme fraiche
fresh pasta (takes minutes to cook ) with asparagus sauce (steam chopped asparagus. blitz with olive oil, salt, pepper, parmesan, grated lemon zest, some lemon juice, and garlic)
fresh fig (or melon), prosciutto, and buffalo mozarella salad
raclette (sliced potatos, gherkins, sliced raclette cheese in broiler until bubbly)
Zaru-soba (cooked soba noodles served cold with a soy sauce based sauce)
Insalada caprese (tomato, basil, fresh mozarella salad)
bagna cauda with crudite

i was soo inspired since reading all the posts here
had today alfresco salad(tesco) and ham, tomatoes and cucumbers, boiled egg with mayo. had slice of brown bread, was yummy yummy.

Thanks for all the replies, there are some really good ideas here.

Divamum, I thing quesadillas are tortilla wraps with various fillings (including cheese) folded over and grilled or baked or something.
